The more you follow the Consistently Keto program, you will realize that since your main goal to getting healthy is to make sure your carbs are not above 20, you will want to replace carbs with fat, getting you into ketosis and burning fat instead of glucose. You will start missing meals because you are so satiated with the fatty meals you’ve eaten and you will notice your cravings have changed. Those sweet and bread cravings will start to fade and when you add up the carbs of those “keto-approved” sweets and flours, you will be more determined to replace them with fat, therefore keeping your carbs 20 or below! The other day I was recipe testing one of those keto sweets, and you know how you pop those stray Lily’s chocolate chips in your mouth thinking that’s just a few…stevia-sweetened, it can’t hurt! I looked at the nutrition label – 8 carbs per tablespoon!! Do you realize how small a tablespoon is?? That’s almost half of my allowance of carbs for the DAY!! And it did nothing to satiate me…a wake-up call for sure!!
So you will start looking for good fats without carbs, which will truly satiate you and fill you up. This dip will be a good one to keep on hand. And if you haven’t decided you love pork rinds, you can also bake pepperoni slices- 350 oven for about 10 minutes, spread out on a foil-lined cookie sheet. If they are not crisp enough, add a few more minutes.
Another great idea for this dip: use this as a stuffing for jalapeno peppers, cut in half and insides removed. Stuff them, wrap a half slice of bacon around, place on cookie sheet lined with foil cut side up, and bake till bacon is brown (cheese will start to brown too). So delicious! This recipe is huge (I actually halved it) but it would be a good one to keep in the fridge to be a part of your fat-filled days (without carbs!).
We have about 35 beautiful ladies determined to get healthy in our support group, and I am starting to hear some success like losing pounds and inches, but also some wonderful healing like their glucose numbers going down. I can’t wait till they start charting their blood pressure, ketone and glucose to get a Dr. Boz ratio which will tell them how much insulin resistance they have! Jalapeno Popper Dip
Ingredients:
½ pound bacon, cooked and crumbled
2 8-ounce packages cream cheese, softened
¼ cup sour cream
¼ cup mayo
½ teaspoon garlic powder
7 jalapenos, seeded and chopped
1 cup shredded cheddar. Divided
½ cup grated Parmesan
½ cup shredded mozzarella
¼ cup sliced green onions, about 2 – 3
Directions:
Preheat oven to 350. In a large mixing bowl, add cream cheese, sour cream, mayo, and garlic powder. Stir until smooth.
Fold in crumbled bacon (reserving 1 tablespoon for garnish), half the
shredded cheddar, mozzarella, Parmesan, jalapenos (reserve 1 tablespoon
for garnish), and green onions.
Transfer to an oven-safe baking dish or skillet (about 8 – 10 inches).
Sprinkle remaining cheddar, bacon and jalapenos on top.
Bake for 10-15 minutes. Enjoy!
