By now, you’ve probably heard of Chaffles! They are the waffle that usually has very few ingredients and therefore, very few carbs. In my constant search for low-carb, especially since my healing program Consistently Keto calls for 20 carbs a day, Chaffles are such a winner! They are usually mainly composed of some type of cheese, hence the name Chaffle. They come together so quickly (your kids could make these with supervision of the waffle iron and they will love them!). Dash products make really good small appliances. My granddaughters have several and use them all the time. Since I’ve been on this CK program, I’m very alert to carb amounts and I’ve really found that the simpler with fewer ingredients, the better! These definitely fit that bill! And remember, you can just make the Chaffles and make a sandwich, top them with sloppy joes, taco meat, chili; you will feel like you have bread again, but not filled with even the keto-approved flours that just add carbs. Pizza Chaffles
These are so fun, so easy and SO delicious! It’s a way to have a “bread” without the carbs! It only takes a few minutes and the options for toppings are limited to your taste and imagination!
Serves 2, 2.7 carbs each
Ingredients:
1 large egg
½ teaspoon Italian seasoning
dash salt and pepper
½ cup plus 2 teaspoons shredded mozzarella cheese, plus more for the topping
2 tablespoons pizza sauce or marinara (no sugar added)
4 ounces breakfast sausage, crumbled and cooked sliced pepperoni or any of your favorite toppings
Preheat a waffle iron (a mini one is great but you can do this with any). In a small bowl, whisk together egg and seasonings. Add the ½ cup mozzarella cheese and mix until combined.
Sprinkle 1 teaspoon cheese onto waffle maker and add half the batter and cook until golden brown and crispy, about 4 minutes (my light turns green when done). Transfer the chaffle to a microwave-safe plate. Repeat with the remaining 1 teaspoon mozzarella and batter.
Top each chaffle with 1 tablespoon pizza sauce, sausage, pepperoni and additional cheese. Heat in the microwave for about 30 second and serve! Enjoy!
