I know it is hot, and going to get hotter, but I always love soup! To me, it is a bowl full of comfort any time of the year! One of our Consistently Keto members submitted this recipe for Low-Carb Chicken Taco Soup, and I’ve made it over and over! I’m telling you, it is the perfect Keto food and very filling!
If anyone knows me well, they know I usually always change a recipe. I look at the recipe and think of ways to make it quicker, healthier or just tastier! I made a few changes with this one for those reasons, but it is still basically the same! Don’t have a pressure cooker? What about a slow cooker? You can make it the very same way, slow cook for four hours on low. Enjoy!
Low-Carb Chicken Taco Soup
Serves 4
7 carbs
1 pound chicken breasts (I use rotisserie, chopped)
½ cup diced onion
4 cloves garlic, minced
1 tablespoon chipotles in adobo sauce, minced (I drop the whole chipotle in the pot and fish it out after cooking; this controls the heat)
1 tablespoon cumin
½ teaspoon chili powder (I used 1 teaspoon)
½ teaspoon smoked paprika (I used 1 teaspoon)
½ teaspoon salt (I used garlic salt and 1 teaspoon)
2 tablespoons lemon juice
1 tablespoon lime juice
2 cups chicken broth (or bone broth)
8 ounces cream cheese
½ cup chopped cilantro (optional)
Pressure cooker method:
Add the chicken, onion, garlic, chipotle, cumin, chili powder, smoked paprika, salt, lemon juice, lime juice, and chicken broth to the pot of a pressure cooker.
Cover, turn vent to seal (or pressure) and cook on high pressure for 18 minutes. If you are using rotisserie chicken, cook for 8 minutes! Allow pressure to release naturally, about 10 minutes, before removing the lid. Remove chicken from pot and shred with two forks (of course, skip this step if rotisserie chicken).
Add the cream cheese to the pot, and allow to melt, breaking it up. Whisk constantly until the cream cheese is fully melted and incorporated. Turn your pressure cooker on warm and add the chicken back to the pot. Add the cilantro and stir well to combine.
When serving, adding pieces of avocado, cheese, bacon, and/or sour cream can only make it even more delicious! Enjoy!!
