I have learned so much about Insulin Resistance just in the last few years. I always associated insulin with diabetes and I knew I wasn’t a diabetic, but I also knew something wasn’t right. My mid-section started growing disproportionately to the rest of my body. When I talked to my doctor and he did all my labs, he just said probably my age. I did not want to hear that. I was working out three times a week, mostly resistance training and walking. I was eating incredibly healthy – no sugar, flour, grains, processed carbs (the foods that supposedly cause belly fat). No matter how little I ate, I never lost weight, not that weight was a goal, but it just confirmed for me that something was holding on to fat and weight…and it is insulin! Do you have Insulin Resistance? You don’t have to be obese or diabetic but if you have:
- Belly fat
- Waist measures bigger than your hips
- Can’t lose weight
- Leaky gut
- Fasting glucose over 100
- Inflammation
- Poor sleep

Insulin Resistance can be caused by many things. I’m pretty sure mine was caused by many years of low-fat, fat-free processed carbs. And then stress causes a rise in cortisol which also affects insulin so when I was consumed in the restaurant, though I loved it, I’m sure that contributed. But the real problem with insulin for me wasn’t the belly fat or weight loss; it was the serious conditions that can be caused by that inflammation. So through this Consistently Keto diet, I have found out how to lower my glucose/glycogen stores in my liver and get rid of the Insulin Resistance and raise my ketones so my body’s fuel will be fat and not glucose.
I am so excited that I have 22 enrolled in this course and support group. These ladies are familiar with keto, but, like me, have not learned it the scientific chemical way and are anxious to get healthy! Mine is an ongoing journey and I’m so happy to have their support. My glucose and ketone numbers are looking great and I’ve finally moved the scales and lost two inches from my waist.
You know I love sharing recipes and when you start a serious keto diet, you don’t want to hear that you can’t have ANY sweets, but as you get into the diet and start feeling success, your cravings will change and you may not want any. But I wanted to give you a crazy-easy “fat bomb” recipe that will satisfy your sweet tooth and increase your fat intake to help you get into ketosis.
Crazy-Easy Fatbomb Fudge
Stir equal amounts (I usually do 2 tablespoons each) almond or peanut butter with coconut oil, a squirt of liquid stevia, dash of vanilla extract. Mix well. Refrigerate till as firm as you want. Want chocolate? Add a tablespoon of cocoa! Want nuts? Add chopped nuts. Today I sprinkled it with coarse sea salt for a salty sweet taste. SOOO good!! Enjoy!
