Before the pandemic, we already knew that over half the nation has Type 2
diabetes and so many more are pre-diabetic or just don’t know. So much attention has been paid to it since a lot of those with diabetes, obesity, heart issues, and other fragile immunities have died after succumbing to Covid 19. That is a fact. But all we hear day after day is to wear masks, wash hands, stay 6 feet apart, don’t touch your face. But we don’t hear anything about taking our health into our own hands, educating medical schools and doctors, along with the public, about how to change our lifestyles to reverse some of these conditions with “Food is Medicine”. There is SO much information, research, tests, and trials to prove that just making small changes will be the beginning of a healthier lifestyle.
I have followed many prestigious doctors and scientists who have findings that can’t be disputed but since I’ve followed Dr. Annette Bosworth, author of “Anyway You Can”, my eyes have truly been opened. I am a part of her pilot course, “Consistently Keto” and we have a private Facebook group that supports each other through this journey.
This morning one of the veterans wrote:
“Some observations on metabolic syndrome, my friends. Keto, at least for me, was never about weight loss. Although I did drop 45 pounds before I hit my proper weight. It was about changing back or correcting my metabolism to function like it is supposed to. Getting the chemistry corrected. How our Creator designed us to function. To be honest, I was really scared as I was dying a slow but obvious death. We have to unlearn the old way and learn the right way. Like a drug addict that has had enough. Once you understand, no once you believe and I mean really believe this to be true then the rest is easy. It all takes time. Some is quick and some healing takes more time than the others on our list of damage that was done over the decades. My top picks: It will minimize the additional coronary artery disease and if you do not have it now it will prevent it. Make it less likely to have dementia. Type 2 diabetes will go away along with hypertension. Your medical bills will be reduced. Your mind will be clear as it is reunited to the efficient ketones it so longs for. Your skin will become noticeably smoother. Your memory will sharpen and you may lose that attitude some of us carry like boat anchors. Your peace of mind will be apparent. All because we reduced the constant inflammation brought on by a carb driven insulin fest. Weight loss is a happy byproduct of correcting all the issues named before, plus so many more. I was never trying to lose
weight, I was gaining my health back. The weight loss just happened.”
This is such an honest view of Consistently Keto, and I am looking so forward to this lifestyle and hoping that you will join us whenever we can start a support group.

Today’s recipe is another dessert, which I’m so happy with the results. I’m
mainly giving you some desserts while you get away from high-carb processed crappy carbage. But eat them sparingly because once you get into ketosis, you probably won’t even want any desserts simply because every carb counts and I’d rather have whole foods that fill me up with satiety!

Keto Texas Sheet Cake
Finally! I have found a really delicious keto cake! I make lots of keto treats but I am usually skeptical about cakes because the ingredients are not cheap and they usually disappoint me. I printed Pioneer Woman’s Texas Sheet Cake and just decided to make it into a keto version. Enjoy!
Ingredients:
2 cups almond flour
2 tablespoons coconut flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon xanthan gum (optional but just keeps cake from getting crumbly)
½ cup unsweetened cocoa
½ teaspoon sea salt
1 cup Swerve granulated sweetener (confectioner works too)
½ cup butter, melted
6 eggs
1 teaspoon vanilla
4 tablespoons sour cream
½ cup coffee
Preheat oven to 350. Mix all dry ingredients, except Swerve, together including cocoa. Set aside. Mix butter and Swerve together. Add eggs, one at a time, until thoroughly incorporated. Add vanilla. Add sour cream. Add dry ingredients to these wet ingredients. Then fold in the coffee. Bake in 9 x 13 baking pan sprayed with baking spray for 15 – 20 minutes.
Frosting:
½ cup butter
1/3 cup heavy cream
1 cup Swerve or monk fruit confectioner sugar
4 tablespoons cocoa
½ teapoon salt
1 teaspoon vanilla
1 cup chopped pecans and two tbsp.
Milk if needed.
Combine the butter, cocoa, cream, Swerve together in a saucepan. Bring to boil.
Remove from the heat and stir in the salt and vanilla. Stir in milk if needed (I haven’t needed it). Stir in pecans. Pour over cake. Cool and cut into 24 pieces. I also made cupcakes, which also makes 24.
