Are you a “baby boomer” like me? Have you gone through decades of believing and obeying the low-carb fat-free era? I was the Queen of all that, even realizing that when they took out the fat, they replaced it with some type of sugar for flavor! I reasoned that fat is what makes you fat, not sugar. There wasn’t a lot of research back then and the sugar industry, corn industry for corn syrup were huge so that’s where we got our information. The Standard American Diet (SAD!), the Diabetic Association, and
the Cancer associations all promote high carb diets with 12 servings of grains, breads, and cereals. Aren’t we supposed to trust them? Little did I know that every time I ate those processed carbs, they were being stored as glucose, causing inflammation, leaky gut, insulin resistance, and most of the time this is stored around your middle (visceral fat) which is the most dangerous fat, even if you’re not overweight.
The ketogenic lifestyle has proven through so many doctors, scientists, and
researchers to reverse diabetes, insulin resistance, inflammation, autoimmune diseases, even cancer! Cancer loves sugar. My daughter Amber is a triple cancer survivor, two of those were malignant brain tumors which can return. She loves life, wants to watch her girls grow up and she loves the ketogenic lifestyle.
I am so excited about so many doctors that are leaving conventional medicine to practice functional medicine-to find out exactly what’s going on inside you that is causing your symptoms and not just give you a pill! Most of them either learned about this lifestyle by necessity for their own ill health or their patients who practiced this lifestyle and came back 40 pounds lighter and great lab reports, causing the Dr. to start researching, using it on himself and then, putting it into practice with his patients with
great results!

Counselor and the other to learn the Consistently Keto lifestyle the right way, taught by Dr. Annette Bosworth, who took her mom who was in her 70s and ready to die, off chemo and into the keto diet. She is cancer free after five years. Dr. Boz has hundreds of YouTubes about every part of how keto repairs and heals. It was not until I read her book “Anyway You Can” that I understood there is a definite process you need to follow
to get your body into ketosis where you are burning fat instead of glucose.

Tuesday I left you with a delicious Keto Lemon Cake just to show you when you get away from sugar, it can be scary to think you have to cold-turkey all those delicious carbs. But believe it or not, once you get into ketosis, you won’t crave sweets and you won’t even want all those meals you are used to!
Today I want to share a very popular dish that is SO easy, satisfying and delicious and definitely Keto!! Keto Jalapeno Popper Chicken Casserole! Enjoy!!
Keto Jalapeno Popper Chicken Casserole
This is delicious and so easy! If you get into the Consistently Keto lifestyle, you will learn not to be afraid of fat! I know it sounds weird, but it is a chemistry that happens in your body when you do it the right way, and you will be burning fat instead of glucose!
Ingredients:
8 ounces cream cheese, softened
1 cup sour cream
2 tablespoons minced onion (dry is fine)
1 teaspoon minced garlic
½ teaspoon smoked paprika (my favorite spice)
salt and pepper
2 pounds boneless skinless chicken, cooked and shredded (I used rotisserie)
½ pound jalapeno peppers
2 cups shredded sharp cheddar cheese
8 ounces cooked and crumbled bacon
Preheat oven to 350 degrees. Spray a casserole dish with cooking spray.
In a large bowl, combine the cream cheese, sour cream, minced onion, garlic, and paprika. Season to taste with salt and pepper.
Stir in the shredded chicken and spread in the bottom of prepared casserole dish.
Cut the tops of the jalapenos and cut lengthwise. Carefully remove the seeds and ribs (the white part). Slice into thin strips and sprinkle on top of the chicken mixture.
Top with cheddar cheese and bake for 25 minutes. Top with the bacon and cook for 5 minutes longer.
