Do you ever grill too many burgers and they really don’t taste as good the second time around as a leftover? I’m in love with this salad! This serves one so when I’m home, filling orders, and lunchtime comes, I’m so excited to have leftover burgers! And I love dill pickles and they are so good for you because they are a fermented food, but I don’t just sit around and eat them…like Terry! And don’t you just get excited when you find a dressing you can make yourself, knowing it doesn’t have all those chemicals and preservatives, and yet it is easy and DELICIOUS?!? This fills that bill! I love it! It doesn’t call for cheese, which I like because I have to watch my dairy intake, but I’m sure you could add cheese and make it a Bacon Cheeseburger Salad. I do add some tomatoes to it sometimes to make it a BBLT-Bacon Burger Lettuce Tomato Salad!! Enjoy!
BACON BURGER SALAD
Serves 1
This is a very simple salad, but with huge flavors, and a great way to use those leftover burgers you grilled! And this is perfect for those days that you need something for lunch, and it’s just you.
Ingredients:
2 cups romaine salad mix, chopped
1/3 cup chopped pickles
5-ounce ground sirloin hamburger patty, cooked and cut into pieces
3 slices of bacon, cooked and chopped
Dressing:
2 tablespoons mayonnaise
1 – 2 tablespoons white or apple cider vinegar, to taste
1 teaspoon mustard
½ tablespoon pickle relish (no added sugar)
Dash of paprika
Pinch of stevia or Swerve, to taste
Layer the shopped romaine, pickles, cooked hamburger patty, and cooked bacon in a large bowl. Mix all the ingredients for the dressing in a small bowl. Drizzle the dressing over salad and enjoy immediately!
