I love trying different chicken dishes; after all, there are SO many! Yesterday was a normally busy day that I was recipe testing and catching up so when it was time to start dinner, there was one more recipe I wanted to try and I had all the ingredients.
Keto Lemon Chicken – I love chicken cutlets, sliced pretty thin, “breaded” with almond flour, grated parm, salt and pepper, then quickly browned in a skillet in olive oil, with a delicious lemon wine cream sauce! Terry comes home from a very long day of driving and I love to have his dinner ready so we can sit down and catch up on both our days. He raved about this meal. I served it with cauliflower mash that I had roasted the cauliflower florets in a 425 oven sprinkled with olive oil, garlic salt, pepper and smoked paprika and after it’s tender, add to my food processor and add a couple spoons of sour cream and parm. Sooooo delicious!

KETO LEMON CHICKEN
This is company-worthy; however, it’s so easy and quick, no one will believe it!
Serves: 4
INGREDIENTS:
16 ounces boneless skinless chicken breast or thighs
1/3 cup almond flour
1/3 cup finely grated Parmesan cheese
1 teaspoon sea salt
1 teaspoon fresh ground black pepper
2 tablespoons olive oil
2 tablespoons white wine or chicken broth
3 tablespoons lemon juice
2 teaspoons lemon zest
1 cup heavy cream
Parsley for garnish
Slice each chicken breast horizontally and pound to an even thickness using a meat mallet.
In a shallow bowl, combine flour, Parm, salt and pepper. Coat the chicken in the flour mixture and shake off the excess.
Heat a large skillet to medium heat and add oil. Add chicken to the pan and cook until a deep golden brown, about 7 minutes per side. Remove from the pan and tent to cover.
Add wine or chicken broth to the skillet and deglaze the pan. Add lemon juice, lemon zest, and heavy cream to the pan. Season to taste with salt and pepper. Cook for 3 minutes, stirring constantly. Return the chicken to the pan to coat with the sauce. Serve with lemon slices.
