This is the question Terry kept asking me! And he had good reason to question this pizza. He knows I’ve made many homemade pizza crusts, and in the last couple of years when we’ve tried to get away from processed carbs, I’ve experimented with so many – cauliflower, cheese, almond flour, coconut flour, quinoa, gluten-free flours – and they’ve just been ok. This one was delicious and after I posted the picture, I had people asking how I made it. And since I tweaked several different recipes to get this pizza, I need to write it down for myself, as well as for you.
Cheesy Pizza Crust
1 1/2 cups shredded mozzarella cheese
2 tablespoons cream cheese
2/3 cup almond flour
2 eggs
1/2 teaspoon each garlic powder, salt, black pepper, basil, oregano
In microwave bowl, melt cheese and cream cheese for 30-40 seconds. Add almond flour, eggs, and seasonings. Mix with hands until it is completely blended together. Cover baking sheet with foil and sprinkle almond flour over surface. Spread out pizza dough. Baked in preheat 400-degree oven for 8-10 minutes or until golden brown. Remove from oven and add toppings.
Toppings are limitless, but for this one I:
Brown 1/2 pound ground beef with 1/2 chopped onion, 2 minced garlic cloves, garlic salt and pepper, and 1 tbsp. Italian seasoning. I added 1 6-ounce can tomato paste and 16 ounces diced tomatoes, and let simmer and reduce. This makes your meat topping and your sauce. I added sliced onion, peppers, tomato slices and more cheese. I put it back in the oven under the broiler, watched it carefully until the cheese is bubbly and browning.
You’re a better wife than me! Tommy can make his own microwave oatmeal and sandwich for lunch. I do cook for supper!
Hey Liz…I’m so glad you have this blog now! I had seen your keto posts on FB and had intended to send you a message. I’ve been keto since mid-April, and I love it! However, several of the “goodie” recipes that I’ve tried haven’t been so “goodie”! But, if YOU say it’s good, I know it will be! I’ll be trying this one soon! Looking forward to seeing more!!
