Addicted to Diets??? If you know me well, you might think that of me. I have forever been interested in different diets. It is not necessarily always my desire to diet to lose weight, though I feel like I’ve always fought the battle of the bulge! But I’ve just always loved studying about different food trends, health programs, food intolerances, and recipes. I think all of us basically want to eat well and be well. When I was serving clients as a Personal Chef in their homes, so many needed special diets, whether it be for a specific health situation or just a desire to lose weight or feel better. So I had the opportunity to research and study new diet trends and how to cook for each of them, but I always enjoyed learning and experimenting these programs.
So right before Thanksgiving last year, I could not seem to lose those top ten pounds, and it seemed the scales and my tape measure around my middle kept growing. I had exhausted most of what I knew about diets and I was eating so healthy! So I joined Metabolic Research Clinic and learned how to combine my healthy foods so that I reset my metabolism and by February I had lost 17 pounds and 27 inches! I felt great! I haven’t gained it back and just love how I feel and eat!
My husband Terry was having a hard time though, and both of us didn’t really see him being committed to my MRC diet. He needed to lose 10-12 pounds and belly fat. I found the book Bacon & Butter, The Ultimate Ketogenic Diet Cookbook, by Celby Richoux and started studying this book and finding every post I could online because the diet seemed too good to be true. The premise is to eat a large part of your diet in healthy fats, medium amounts of protein and a very low amount of carbs, encouraging the body to stop burning carbohydrate and protein for fuel in favor of burning fat, thus entering a state of ketosis.
What excited me about the book was not only very easy-to-understand explanation of how the Keto diet works, but the recipes looked amazing!! There are 150 recipes from Breakfast to Snacks and Appetizer, Entrees, Sides, Desserts and Sauces. So far, every recipe I’ve tried has been awesome! I’m dying to share with you and just like in my recently published cookbook Leave it to Liz, I began with Desserts, I’m going to stick with that pattern and give you this delicious recipe that I’ve changed to make even more delicious but still “legal”. Instead of the almond flour and butter crust, I made my Peanut Butter Flax Cookie recipe (in my cookbook) for the crust and then I melted chocolate for the topping.
MINIATURE CHEESECAKES
Serves 12
1 cup peanut butter
½ cup granulated Stevia, or other sugar substitute
½ cup ground flax
1 teaspoon vanilla
1 egg
2 cups cream cheese at room temperature
1 egg
¾ cup Stevia, or other sugar substitute
1 teaspoon vanilla
½ teaspoon lemon juice
½ cup unsweetened chocolate
1 tablespoon coconut oil
1 teaspoon Stevia
Directions:Preheat oven to 350©.Line cupcake pan with cupcake liners.
Mix peanut butter, Stevia, flax, vanilla, and egg till blended.With a small scoop, drop dough into 12 liners.You will not need all the dough, so bake the rest as cookies.Bake for 8 minutes.
In food processor add cream cheese, sugar substitute, egg, vanilla and juice. Scrape down sides and blend well. Divide mixture into the twelve liners and bake for 20 minutes.
Melt chocolate and coconut oil in microwave. Add stevia to taste. Drizzle over cheesecakes. Get ready to be WOWed!!!!
