This time of year we just automatically start thinking pumpkin spice lattes, pumpkin bread, cheesecakes, and muffins, but if you are strictly lowcarb or keto, you think you can’t have any of that. Recently a friend of mine told me her husband tried to make some keto pumpkin bread, but it was “nasty” and she asked if I’d made any keto pumpkin recipes. I always make keto pumpkin pies and cheesecakes. Then I remembered I had a healthy pumpkin muffin recipe in my cookbook, so I decided to make it more keto friendly. Actually pumpkin is a pretty low-carb ingredient and if you make it with a small amount, plenty of spices, and only a small amount of coconut flour which is fiber rich, trade the sugar for Swerve or Monk Fruit, and add butter or coconut oil and eggs then you now have a really healthy muffin. And then I had an epiphany! Make a cheesecake filling baked into the muffin, giving you more healthy fats to increase your fat intake!!
I prepared the muffins, couldn’t taste them because I was in the middle of a fast, so I boxed them up and took to my friend, with an agreement that she HAS to give me her honest opinion so I will know if I should share with you! Her reaction: “Perfection!” Yea!! I hope you enjoy them too!
Pumpkin Cheesecake Muffins
Serves 12
Ingredients:
½ cup pumpkin puree
½ cup confectioners Swerve or Monk Fruit
½ cup butter, softened
4 large eggs
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
½ teaspoon or more ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground ginger
¼ cup plus 2 tablespoons coconut flour
Cheesecake Filling:
4 ounce softened cream cheese
1/3 cup confectioners Swerve or Monk Fruit
1 teaspoon vanilla
1 egg
Preheat oven to 350 and line your muffin tins with liners.
Add all ingredients for muffins into a food processor and blend well. Scoop batter into liners and prepare cheesecake filling. In medium bowl, with electric mixer, beat filling ingredients till blended. Make a large indention (I use a tamper) in middle of muffin batter. Using a small scoop, dip into cheesecake filling and add filling to hole in muffin batter.
Bake for 18 minutes or until toothpick inserted into the batter part comes out clean. Enjoy!
