And no, I don’t mean pizza, though that is wonderful and the recipe I’m giving you is such a keeper!
We are living in a historic time for ALL of us and I don’t know ANYONE who likes our situation. The virus, sickness, fear, deaths of people as well as businesses, divorces, suicides, abuse, riots, schools, loneliness, separation from our loved ones, and I could go on and on. None of us know how it’s all going to play out. But like my pastor Doug Pruitt preached Sunday “God is Sovereign”. “Our God is in the heavens, and He does as He wishes.” Psalm 115:3
The first essential I’m talking about is:
Making sure you have a personal relationship with Jesus!
We always have a “So What?” at the end of the message, meaning what are we going to take from this message? Yesterday’s was “God’s plan and purpose will always be accomplished and you are invited to be His accomplice.” I definitely want to be His accomplice, part of His purpose and plan, and I sincerely hope you do! Just think…no matter what happens with everything that’s going on, the ones of us who have accepted Jesus as our personal Lord and Savior (His accomplices) have the peace that God is Sovereign! He’s got this!
The second essential is:
Changing our lifestyles to heal ourselves!
When the pandemic started, it wasn’t long till we found out the virus attacks mainly the older people and specifically those with diabetes, obesity, heart issues, and any inflammatory diseases. Sixty percent of Americans have diabetes and so many others have it and don’t know it! These diseases start with insulin resistance, which is the reason for 85-90% of all sickness. There is so much information and research proven that cutting or lowering carbs from our diets will reduce insulin, therefore reducing inflammation and triglycerides which is the real reason for heart attacks and disease.
Since starting Consistently Keto lead by Dr. Annette Bosworth, author of “Anyway You Can”, Terry and I try to get 20 carbs or less and lots of healthy fats. When you have this way of eating, you fill up and are satiated and you just do not want to eat like you did when you had carbs which only makes you want more. We have both lost weight and inches but more importantly, we see new healing all the time! We are never sick and that gives me peace that we have immunities to fight anything we come in contact with. All we’ve heard for months now is “wear a mask”, “social distance” and “wash your hands”, but we don’t hear from our leaders, in my opinion, change your lifestyle by cutting those carbs, reducing inflammation, thereby reducing or eliminating all those meds, along with exercising, and HEALING!
I know the biggest question when you begin a new eating program is “what do I eat?” This plan is so easy- you just cut your carbs to 20 and start watching for healing changes in your body!!
I think I could make and eat this pizza every day!! It is not only easy, but it is delicious and serves two with only 2 carbs per serving!

Keto Chicken and Spinach White Pizza
Serves 2
Carbs 2
Pizza Dough:
2 oz. Cream cheese
3/4 cup shredded mozzarella
1 egg, beaten
1/4 teaspoon garlic powder
1/3 cup almond flour (I used crushed pork rinds)
Toppings:
3 slices bacon, cooked and crumbled
1 boneless skinless chicken breast
½ tablespoon olive oil
1 clove garlic, minced
½ cup heavy cream
¼ teaspoon xanthan gum
1 cup fresh spinach, roughly chopped
½ cup shredded mozzarella
sea salt & pepper to taste
Directions: For crust, melt mozzarella and cream cheese in the microwave
for 30 seconds at a time, mixing often till melted. Add remaining
ingredients and mix well till blended. Refrigerate while making toppings.
Cut chicken into bite-size pieces; season with salt and pepper. Saute in
olive oil in skillet till done. Remove, set aside.
To skillet, add garlic and xantham gum with cream to the skillet and bring to boil. Reduce to simmer when sauce starts to thicken. Fold in spinach, cook just until wilted.
Line baking sheet or pizza pan with parchment paper. Place dough on paper and cover with another parchment paper. Roll or press into circle. Remove top paper and bake in 350 degree oven for 10 minutes. Spread
sauce/spinach mixture onto your cooked pizza crust. Top with chicken,
bacon and cheese. Bake 5 minutes or until cheese is melted. Enjoy!
