I picked up a copy of America’s Test Kitchen’s Multicooker Perfection where they tested all the top pressure cookers and they ranked the Fagor Lux LCD as the No. 1 pressure cooker! I couldn’t believe I didn’t have this pressure cooker, nor had I even seen it! So of course, I had to have it and I couldn’t wait to test it myself! As you can tell by the picture, it has an LCD screen with different functions that you dial down to and after you choose the function, then you choose if you want to customize or use their preset function. The cooking pot is stainless steel and comes with a steamer basket and trivet.
I knew for my first recipe I wanted to make Smoky Mushrooms, which have become a favorite (thanks Gigi!!). These mushrooms are so quick and easy and are just delicious as a side, a topping for pizza, rice, or meat, which is what I am sharing today.
Don’t worry if you don’t have this Pressure Cooker yet, but if you are in the market for one, you might want to check this one out. It has been really fun experimenting with it and so far, I am extremely satisfied!
PORK TENDERLOIN TOPPED WITH SMOKY MUSHROOMS
Serves 3
1 tablespoon ghee (or butter)
1 8-ounce carton mushrooms, sliced
1 onion, diced, or frozen chopped onions
1/2 teaspoon sea salt
2 tablespoons coconut aminos or soy sauce
1/4 teaspoon (or more) smoked paprika
Mushroom Directions: Start by melting the ghee or butter in the pot of your pressure cooker by pressing the Saute or Brown feature. Add the mushrooms, onion and seasonings and allow to cook about 5 minutes. Now secure the lid and close off the pressure valve. Press the stop/cancel button, and then press Pressure button, or manual and set for 3 minutes. Once the cooking cycle completes, quick-release the pressure valve and remove the lid once safe to do so. Transfer mushrooms to a bowl.
Pork Directions: I trimmed a pork tenderloin and cut into 1/2 inch cutlets. I sprinkled each with olive oil, lemon pepper seasoning, salt and pepper. Turn the pressure cooker on Brown or Saute and brown pork on each side for a few minutes.
Top pork with mushroom mixture and turn off PC. Set on Pressure for 8 minutes. Can quick-release or let come down naturally.
