The answer is YES!! I love using Erythitol, the natural zero-calorie sweetener recommended by the Ketogenic diet because it doesn’t leave a bitter taste and it doesn’t upset my stomach! The Mini Cheesecake recipe in the Bacon & Butter Cookbook has a really good one to use your imagination and create different delicious cheesecakes! I don’t think I’ve made it once the way the original recipe was written. I have substituted the almond and butter crust for my Peanut Butter Flax Cookie crust (my fave!), I have added a couple tablespoons cocoa to the almond crust for a chocolate crust, I have replaced the almond flour with pecans that I ground up in the food processor, I have added a half cup peanut butter to the filling, and I always add an egg, which makes it so much creamier! I usually top it with melted chocolate. The one pictured that I made yesterday is listed here, but have fun with your own delicious creations!
KETO CHEESECAKE WITH PEANUT BUTTER CRUST
Crust:
1/2 cup peanut butter
1/3 cup flax meal
1/3 cup erythitol
1 teaspoon vanilla
1 egg
Directions: Preheat oven to 325. In small bowl, mix peanut butter, flax meal, erythitol, vanilla and egg. Mix well and press into the bottom of a 6-inch or 8-inch springform pan sprayed with cooking spray. Cover the bottom and sides of pan with foil and set on a baking sheet. Bake for 8 minutes.
Cheesecake:
2 8-ounce packages of cream cheese (room temp)
1 egg
1 teaspoon vanilla
1 teaspoon lemon juice
3/4 cup erythitol
Optional:
1/2 cup peanut butter
Directions: In food processor, add cream cheese, egg, vanilla, lemon juice, erythitol (and peanut butter if desired). Process until creamy, scraping down sides. Bake for 50-60 minutes in 6-inch pan and 40-50 minutes in 8-inch pan. Let cool in pan.
Topping:
1/3 cup sugar free chocolate chips (I use Lily’s sweetened with Stevia)
1 tablespoon coconut oil
Directions: Melt chocolate chips with coconut oil in microwave for 30-second intervals stirring after each time till melted and smooth.
Remove cheesecake from pan and top with chocolate. Enjoy!
This is soooo good. It tastes kind of like Reese’s Penut Butter cups.
